Ingredients

  • 2 flatbreads or naan
  • 1 cup cooked shredded chicken
  • ½ cup BBQ sauce, plus extra for drizzling
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup thinly sliced red onion
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1 tablespoon olive oil or garlic butter (optional)

Optional Toppings:

  • Pickled jalapeños
  • Bacon bits
  • Crispy fried onions

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix shredded chicken with BBQ sauce until evenly coated.
  3. Place flatbreads on the baking sheet and brush lightly with olive oil or garlic butter.
  4. Spread a thin layer of BBQ sauce over each flatbread if desired.
  5. Sprinkle half of the mozzarella and cheddar over the flatbreads.
  6. Top with BBQ chicken, red onion slices, and remaining cheese.
  7. Bake for 10–12 minutes until the cheese is melted and the edges are golden.
  8. Remove from the oven and garnish with cilantro or parsley.
  9. Add optional toppings and an extra drizzle of BBQ sauce if desired.
  10. Slice and serve immediately.

Notes

Rotisserie chicken works wonderfully and saves prep time.

For extra smoky flavor, season the chicken with smoked paprika and garlic powder before mixing with BBQ sauce.

A light sprinkle of cornmeal under the flatbread helps create an extra crispy crust.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
