Ingredients
- 1 pound chicken tenders or chicken breasts, thinly sliced
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- ½ teaspoon cumin
- 1 teaspoon salt, divided
- 1 small red bell pepper, diced
- 1 small white onion, diced
- 2 cloves garlic, minced
- ¼ cup fresh cilantro, chopped
- 2 chipotle peppers in adobo sauce, minced
- 2 tablespoons adobo sauce, divided
- ½ cup low-fat Greek yogurt or sour cream
- Juice of ½ lime
- 4 soft taco-size flour tortillas
- 2 cups Monterey Jack cheese, freshly shredded
- 1 tablespoon olive oil, plus more as needed
Instructions
- Toss the chicken with chili powder, garlic powder, cumin, and ½ teaspoon salt until evenly coated.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–6 minutes until fully cooked. Transfer to a bowl.
- In the same skillet, sauté bell pepper and onion until softened. Add garlic and cook for 30 seconds.
- Combine the vegetables with the chicken. Stir in chipotle peppers, 1 tablespoon adobo sauce, and cilantro.
- In a small bowl, mix Greek yogurt, lime juice, remaining salt, and remaining adobo sauce to make the sauce.
- Sprinkle cheese over half of each tortilla, add chicken mixture, then top with more cheese. Fold tortillas in half.
- Cook quesadillas in a lightly oiled skillet over medium-low heat for 3–4 minutes per side until golden and crispy.
- Rest for 2 minutes, slice, and serve with chipotle yogurt sauce.
Notes
Freshly shredded cheese melts better than pre-shredded cheese.
Monterey Jack can be replaced with pepper jack, cheddar, or mozzarella.
Adjust the amount of chipotle peppers to control the spice level.
Cook over medium-low heat to allow the cheese to melt before the tortilla browns too much.
Quesadillas are best enjoyed immediately after cooking.
Gluten-free tortillas can be used for a gluten-free version.
