For the Croutons

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 garlic clove, grated
  • Kosher salt and black pepper, to taste
  • 4 cups ciabatta bread cubes

For the Chicken

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 garlic clove, grated
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • pounds boneless, skinless chicken breasts

For the Dressing

  • ¼ cup mayonnaise
  • ¼ cup buttermilk
  • 3 tablespoons freshly grated Parmesan cheese
  • 1 garlic clove, grated
  • 1 tablespoon fresh lemon juice
  • 1½ teaspoons Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • Kosher salt and black pepper, to taste

For the Salad

  • 2 heads romaine lettuce, roughly chopped
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine olive oil, parsley, garlic, salt, and pepper. Toss with ciabatta cubes and spread on a baking sheet. Bake for 13–15 minutes until golden and crispy.
  3. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper. Marinate the chicken for at least 2 hours.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill the chicken for 4–5 minutes per side or until the internal temperature reaches 165°F. Let rest, then slice or dice.
  6. In a medium bowl, whisk together mayonnaise, buttermilk, Parmesan, garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, and pepper.
  7. Add romaine lettuce to a large serving bowl.
  8. Top with grilled chicken and homemade croutons.
  9. Drizzle with dressing and toss gently to coat.
  10. Finish with Parmesan cheese and serve immediately.

Notes

Marinating the chicken for the full 2 hours produces the best flavor and juiciest texture.

Sourdough bread can be substituted for ciabatta when making croutons.

For a gluten-free version, use gluten-free bread for the croutons.

The dressing can be prepared up to 3 days in advance.
