For the Croutons
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons chopped fresh parsley
- 1 garlic clove, grated
- Kosher salt and black pepper, to taste
- 4 cups ciabatta bread cubes
For the Chicken
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 1 garlic clove, grated
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1½ pounds boneless, skinless chicken breasts
For the Dressing
- ¼ cup mayonnaise
- ¼ cup buttermilk
- 3 tablespoons freshly grated Parmesan cheese
- 1 garlic clove, grated
- 1 tablespoon fresh lemon juice
- 1½ teaspoons Dijon mustard
- ½ teaspoon Worcestershire sauce
- Kosher salt and black pepper, to taste
For the Salad
- 2 heads romaine lettuce, roughly chopped
- ¼ cup freshly grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Combine olive oil, parsley, garlic, salt, and pepper. Toss with ciabatta cubes and spread on a baking sheet. Bake for 13–15 minutes until golden and crispy.
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper. Marinate the chicken for at least 2 hours.
- Preheat a grill or grill pan over medium-high heat.
- Grill the chicken for 4–5 minutes per side or until the internal temperature reaches 165°F. Let rest, then slice or dice.
- In a medium bowl, whisk together mayonnaise, buttermilk, Parmesan, garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, and pepper.
- Add romaine lettuce to a large serving bowl.
- Top with grilled chicken and homemade croutons.
- Drizzle with dressing and toss gently to coat.
- Finish with Parmesan cheese and serve immediately.
Notes
Marinating the chicken for the full 2 hours produces the best flavor and juiciest texture.
Sourdough bread can be substituted for ciabatta when making croutons.
For a gluten-free version, use gluten-free bread for the croutons.
The dressing can be prepared up to 3 days in advance.
Store salad components separately to maintain freshness.
