  • ½ pound boneless, skinless chicken breasts
  • 6 cups spring mix lettuce
  • 1 cup fresh blackberries
  • 1 medium avocado, sliced
  • ¼ cup red onion, sliced
  • ¼ cup chopped walnuts

Dressing

  • ½ cup fresh blackberries
  • 2 teaspoons Dijon mustard
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat a cast iron skillet over medium-high heat and cook the chicken breasts until fully cooked through (about 5–7 minutes per side). Remove, tent with foil, and let rest.
  2. In a large bowl, add the spring mix lettuce as the base.
  3. Arrange the fresh blackberries, sliced avocado, red onion, and chopped walnuts over the greens.
  4. In a medium bowl, combine blackberries, Dijon mustard, balsamic vinegar, olive oil, honey, and soy sauce. Mash the berries with a fork and whisk until combined. Season with salt and pepper.
  5. Slice the rested chicken and place on top of the salad.
  6. Drizzle the dressing over the salad and serve immediately.
