- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 4 boneless, skinless chicken breasts
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon salt (or to taste)
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 wheel (5.2 oz) Boursin Garlic & Fine Herbs cheese
- 1 cup fresh spinach, chopped
- 1/4 cup shredded Parmesan cheese
- Fresh parsley, chopped (optional)
Instructions
- Season chicken with garlic powder, paprika, salt, and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Cook chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add orzo and toast for 1–2 minutes, stirring frequently.
- Pour in chicken broth and bring to a simmer. Cover and cook for 8–10 minutes, stirring occasionally, until orzo is tender.
- Reduce heat and stir in heavy cream and Boursin cheese until smooth and creamy.
- Add chopped spinach and cook until wilted (about 1 minute).
- Return chicken to the skillet and let everything heat through.
- Sprinkle with Parmesan and parsley before serving.
