Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 4 boneless, skinless chicken breasts
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 wheel (5.2 oz) Boursin Garlic & Fine Herbs cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup shredded Parmesan cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Season chicken with garlic powder, paprika, salt, and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Cook chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add orzo and toast for 1–2 minutes, stirring frequently.
  4. Pour in chicken broth and bring to a simmer. Cover and cook for 8–10 minutes, stirring occasionally, until orzo is tender.
  5. Reduce heat and stir in heavy cream and Boursin cheese until smooth and creamy.
  6. Add chopped spinach and cook until wilted (about 1 minute).
  7. Return chicken to the skillet and let everything heat through.
  8. Sprinkle with Parmesan and parsley before serving.
