Description

This Butternut Squash and Black Bean Enchilada Skillet is a cozy, cheesy one-pan dinner packed with bold Tex-Mex flavors, tender squash, hearty beans, and melty goodness—perfect for an easy weeknight meal.


Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 3 cups ½-inch diced, peeled butternut squash
  • Salt and pepper, to taste
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • ½ jalapeño, diced (seeded for less heat)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 (15 oz) can black beans, drained and rinsed
  • 8 yellow corn tortillas, cut into thick strips
  • 1 (15 oz) can red enchilada sauce
  • 1 cup shredded colby jack or Mexican cheese, divided
  • Fresh cilantro, for garnish
  • Greek yogurt or sour cream, for serving

Instructions

  1. Heat oil in a large oven-safe skillet over medium heat. Add onion, garlic, and jalapeño. Cook for 3–5 minutes until softened and fragrant.
  2. Add butternut squash, cumin, chili powder, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until squash is fork-tender. Cover if needed to speed cooking.
  3. Stir in black beans, tortilla strips, and enchilada sauce until well combined.
  4. Reduce heat to medium-low. Add ½ cup cheese and stir until melted. Let simmer for a few minutes.
  5. Turn broiler to high. Sprinkle remaining cheese on top and broil for 3–5 minutes until melted and bubbly.
  6. Remove from oven and garnish with cilantro. Serve warm with Greek yogurt or sour cream.

Notes

  • Cover the skillet while cooking squash to soften it faster.
  • For extra heat, leave jalapeño seeds or add hot sauce.
  • Tortillas will soften as they absorb sauce—this is expected and delicious.
  • Swap butternut squash with sweet potatoes if desired.
