Description

  • 4 boneless, skinless chicken breasts (or 6 thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 cup cherry or grape tomatoes, halved
  • 2 cloves garlic, minced
  • 1 ½ cups shredded mozzarella (or fresh mozzarella slices)
  • ½ cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • ¼ teaspoon red pepper flakes (optional)

Instructions

1. Preheat & Prepare
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Season chicken with salt, pepper, garlic powder, and Italian seasoning.

2. Sear the Chicken
Heat olive oil in a skillet over medium heat. Sear chicken for 2–3 minutes per side until lightly golden. Transfer to baking dish.

3. Add Toppings
Scatter tomatoes and minced garlic around chicken. Top with mozzarella and sprinkle red pepper flakes if using.

4. Bake
Bake uncovered for 25–30 minutes, until chicken reaches 165°F and cheese is melted and bubbly.

5. Garnish & Serve
Top with fresh basil and drizzle with balsamic glaze before serving.
