This Caprese Pasta Salad is a fresh, high-protein twist on a classic favorite. Packed with juicy cherry tomatoes, creamy mozzarella, and fragrant basil, it’s tossed in a rich balsamic dressing for a quick, satisfying meal perfect for lunch, dinner, or gatherings.

For the dressing:
- 3 tbsp mayonnaise
- 2 tbsp balsamic vinegar
- 1/3 cup olive oil
- 1/4 tsp garlic powder
- Pinch of red pepper flakes
- Salt, to taste
- Black pepper, to taste
For the pasta salad:
- 8 oz protein pasta
- 8 oz mozzarella, diced into 1/2-inch cubes
- 1 pint cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
Instructions
- Dice the mozzarella into small cubes, slice the cherry tomatoes, and chop the fresh basil. Set aside.
- Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions.
- Drain the pasta and rinse under cold water until completely cooled.
- In a large bowl, whisk together mayonnaise and balsamic vinegar until smooth.
- Slowly drizzle in olive oil while whisking to create a creamy dressing.
- Add garlic powder, red pepper flakes, salt, and black pepper. Mix well.
- Add the cooled pasta to the dressing and toss until evenly coated.
- Gently fold in mozzarella, cherry tomatoes, and basil.
- Taste and adjust seasoning if needed.
- Let sit for 5–10 minutes before serving for best flavor.
Notes
For extra protein, add grilled chicken or chickpeas.
Use fresh basil for the best flavor—dried won’t give the same brightness.
Chill for 30 minutes if you prefer a colder, more refreshing salad.
Add a drizzle of balsamic glaze before serving for extra depth.
