Citrus Miso-Ginger Dressing

- 1 Tbsp. white miso paste
- 1 Tbsp. rice vinegar
- 2 tsp. grated fresh ginger
- 1 garlic clove, minced
- 1 tsp. honey
Carrot Salad
- 1.25 lbs. large carrots (rainbow or orange)
- 1 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup pomegranate arils
- 3 Tbsp. toasted sesame seeds
Instructions
- In a large bowl, whisk together olive oil, orange juice, miso paste, rice vinegar, ginger, garlic, and honey until smooth.
- Peel carrots and shave into thin ribbons using a vegetable peeler.
- Add carrot ribbons to the bowl and toss well to coat with dressing.
- Add cilantro, mint, pomegranate arils, and sesame seeds. Toss gently to combine.
- Taste and adjust seasoning if needed.
