- 1 tablespoon oil
- Salt and pepper to taste
- 2 cups cooked rice (white, jasmine, or brown)
- 1 cup pineapple chunks
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon grated ginger (optional)
- Green onions or sesame seeds for garnish
Instructions
- Cook the chicken:
Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook until golden and fully cooked (6–8 minutes). Remove and set aside. - Make the sauce:
In a bowl, whisk together pineapple juice, soy sauce, honey, cornstarch, garlic, and ginger until smooth. - Cook pineapple & sauce:
Add pineapple chunks to the skillet and cook for 2–3 minutes until slightly caramelized. Pour in the sauce and simmer until thickened. - Combine:
Return the chicken to the skillet and toss until fully coated in the glossy sauce. - Serve:
Spoon over warm rice and garnish with green onions or sesame seeds.
Notes
- Use day-old rice for better texture—it won’t get mushy.
- Adjust sweetness by adding more honey or pineapple juice.
- Add veggies like bell peppers or broccoli for extra color and nutrition.
- Sauce too thick? Add a splash of water or juice. Too thin? Simmer longer.
