Description

This easy Chicken Bruschetta Casserole combines creamy shredded chicken, fresh Roma tomatoes, basil pesto, everything bagels, and melted mozzarella for a comforting, flavor-packed dinner.


Ingredients

  • 4 everything bagels, cut into bite-sized pieces
  • ½ cup herb and garlic cream cheese
  • ½ cup 18% cream
  • 2 cups cooked chicken breast, shredded (about 2 medium chicken breasts)
  • 2 cups Roma tomatoes, diced, seeds and excess juice removed
  • ½ cup red onion, diced
  • 2 tablespoons basil pesto
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon grated Parmesan cheese
  • ½ cup mozzarella cheese, finely grated


Instructions

  1. Preheat the oven to 400°F. Lightly grease a 9×13-inch baking dish.
  2. Cut the everything bagels into bite-sized pieces and spread them evenly over the bottom of the prepared baking dish.
  3. Add the herb and garlic cream cheese and cream to a medium saucepan. Heat over medium-low, whisking until smooth and no lumps remain.
  4. Add the shredded chicken and stir until evenly coated in the cream cheese mixture. Remove from the heat.
  5. In a small bowl, combine the diced Roma tomatoes, red onion, basil pesto, salt, black pepper, and Parmesan.
  6. Spread the creamy chicken mixture evenly over the bagel pieces.
  7. Spoon the bruschetta mixture evenly over the chicken.
  8. Sprinkle the finely grated mozzarella over the top.
  9. Bake for 30 minutes, or until heated through and the cheese is melted and lightly golden.
  10. Let the casserole rest for about 5 minutes before serving. Enjoy!

Notes

  • Remove the seeds and excess juice from the tomatoes to prevent the casserole from becoming watery.
  • Leftover cooked chicken or rotisserie chicken works well and saves prep time.
  • Keep the cream cheese mixture over medium-low heat so it melts smoothly without scorching.
  • Cut the bagels into similar-sized pieces for more even baking.
  • Let the casserole rest for 5 minutes after baking so it is easier to portion.
  • Because pesto, Parmesan, cream cheese, and everything bagels can already be salty, adjust added salt to taste.
