- 1 lb (450g) boneless, skinless chicken breast, cubed
- 1 cup dried lentils, rinsed
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 can (14 oz) diced tomatoes, undrained
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5 minutes until softened.
- Stir in the garlic, cumin, smoked paprika, and turmeric. Cook for 1 minute until fragrant.
- Add the chicken cubes and cook until lightly browned on all sides.
- Pour in the chicken broth, diced tomatoes, and lentils. Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender and the chicken is cooked through.
- Season with salt and pepper to taste. Adjust the spices if desired.
- Ladle into bowls, garnish with fresh parsley or cilantro, and serve warm.
