Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, cubed
  • 1 cup dried lentils, rinsed
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley or cilantro for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5 minutes until softened.
  • Stir in the garlic, cumin, smoked paprika, and turmeric. Cook for 1 minute until fragrant.
  • Add the chicken cubes and cook until lightly browned on all sides.
  • Pour in the chicken broth, diced tomatoes, and lentils. Bring the mixture to a boil.
  • Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender and the chicken is cooked through.
  • Season with salt and pepper to taste. Adjust the spices if desired.
  • Ladle into bowls, garnish with fresh parsley or cilantro, and serve warm.
