Description

This Chicken Torta Sandwich is a bold Mexican-style sandwich layered with juicy chipotle chicken, creamy avocado, refried beans, fresh vegetables, and melty cheese on toasted crusty bread. Perfect for lunch or dinner, it’s packed with smoky flavor, satisfying textures, and easy weeknight comfort.

  • 2 telera or bolillo rolls
  • 1 lb boneless skinless chicken breast or thighs
  • 1 tbsp chipotle in adobo
  • 1 tbsp lime juice
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Olive oil for cooking
  • 1 avocado, sliced
  • ½ cup refried beans
  • ½ cup shredded lettuce
  • 1 tomato, sliced
  • ¼ onion, thinly sliced
  • ¼ cup pickled jalapeños
  • ¼ cup queso fresco or mozzarella
  • 2 tbsp mayonnaise or crema

Instructions

  1. In a bowl, marinate the chicken with chipotle in adobo, lime juice, garlic, salt, and pepper for at least 30 minutes.
  2. Heat olive oil in a skillet or grill pan over medium heat. Cook chicken for 5–6 minutes per side until fully cooked and lightly charred. Let rest, then slice thinly.
  3. Slice the telera or bolillo rolls and lightly toast until golden and crisp.
  4. Spread refried beans on the bottom half of each roll and mayonnaise or crema on the top half.
  5. Layer with sliced chicken, avocado, cheese, lettuce, tomato, onions, and jalapeños.
  6. Close the sandwiches and serve immediately with fries, chips, or salad.

Notes

Chicken thighs stay extra juicy and flavorful.

Toasting the bread helps prevent soggy sandwiches.

Adjust jalapeños depending on your spice preference.

Oaxaca or Monterey Jack cheese also work beautifully in this sandwich.
