Chicken:

  • 1.4 lb boneless, skinless chicken thighs
  • ½ teaspoon chili powder (or more to taste)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Peaches:

  • 2 medium yellow peaches, sliced
  • 3 tablespoons honey (or more to taste)
  • Juice of ½ lemon
  • 2 tablespoons butter

Optional:

  • Fresh thyme, for garnish

Instructions

  1. Season the chicken
    Season chicken thighs with chili powder, Italian seasoning, salt, and pepper.
  2. Sear the chicken
    Heat a large skillet over medium heat for 2 minutes. Add olive oil, then place chicken in the skillet. Cook undisturbed for 5 minutes.
  3. Flip and finish cooking
    Flip chicken, reduce heat to medium-low, and cook another 5 minutes or until fully cooked. Remove from skillet.
  4. Cook the peaches
    In the same skillet, add sliced peaches and cook for about 5 minutes until slightly softened.
  5. Make the sauce
    Add honey, lemon juice, and butter. Stir until melted and combined.
  6. Assemble
    Return chicken to the skillet, nestling it between the peaches. Heat briefly.
  7. Serve
    Remove from heat and garnish with fresh thyme. Serve warm.

  • Don’t overcook peaches—they should stay slightly firm.
