- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
Peaches:
- 2 medium yellow peaches, sliced
- 3 tablespoons honey (or more to taste)
- Juice of ½ lemon
- 2 tablespoons butter
Optional:
- Fresh thyme, for garnish
Instructions
- Season the chicken
Season chicken thighs with chili powder, Italian seasoning, salt, and pepper. - Sear the chicken
Heat a large skillet over medium heat for 2 minutes. Add olive oil, then place chicken in the skillet. Cook undisturbed for 5 minutes. - Flip and finish cooking
Flip chicken, reduce heat to medium-low, and cook another 5 minutes or until fully cooked. Remove from skillet. - Cook the peaches
In the same skillet, add sliced peaches and cook for about 5 minutes until slightly softened. - Make the sauce
Add honey, lemon juice, and butter. Stir until melted and combined. - Assemble
Return chicken to the skillet, nestling it between the peaches. Heat briefly. - Serve
Remove from heat and garnish with fresh thyme. Serve warm.
