Chinese Chicken Salad is a fresh, crunchy, restaurant-style salad loaded with tender chicken, crisp lettuce, cabbage, carrots, crunchy wontons, and a bold Asian sesame dressing.

For the Salad
- 2 cups rotisserie chicken breast, shredded
- 1 head romaine lettuce, shredded
- 1 head iceberg lettuce, shredded
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1/4 cup green onions, thinly sliced
- 3 tablespoons cilantro leaves, chopped (optional)
- 1 pinch crushed red pepper flakes
- 1 tablespoon sesame seeds
- 1/2 cup slivered almonds
- 1 cup crispy wonton strips
For the Asian Dressing
- 1 1/4 teaspoons fresh ginger, minced
- 2 garlic cloves, minced
- 1/3 cup rice vinegar
- 1/2 cup dark sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon water
- 1 tablespoon molasses
- 2 tablespoons plus 1/2 teaspoon honey
- 1/8 teaspoon black pepper
- 1 teaspoon crushed red chili flakes
- 1 teaspoon sesame seeds
- 1/2 tablespoon creamy peanut butter
Instructions
- Add shredded chicken to a large bowl. Pour half of the dressing over the chicken and toss well. Let it marinate for 10 minutes.
- In the same bowl, add romaine lettuce, iceberg lettuce, cabbage, carrots, green onions, and cilantro. Toss gently to combine.
- Drizzle the remaining dressing over the salad right before serving and toss again.
- Top with sesame seeds, almonds, crispy wonton strips, and crushed red pepper flakes.
- Serve immediately while the salad stays crisp and crunchy.
Notes
For extra flavor, add mandarin oranges, water chestnuts, or chow mein noodles.
Use rotisserie chicken and pre-shredded veggies to save time.
Store dressing separately until serving for maximum crunch.
Omit peanut butter if serving guests with nut allergies.
The dressing tastes even better after resting for 10 minutes.
