  • 4 cups shredded romaine lettuce
  • 1 cup shredded Monterey Jack cheese
  • 1 recipe Chipotle Guacamole
  • ½ cup sour cream
  • 1 lime, cut into wedges

Fresh Tomato Salsa

  • 23 medium tomatoes (about 1 pounds), diced
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • 3 jalapeños, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • Salt, to taste

Instructions

  1. Prepare the Chipotle Chicken, Cilantro Lime Rice, Easy Corn Salsa, and Chipotle Guacamole according to their recipes.
  2. Warm the black beans over low heat until heated through.
  3. In a bowl, combine the tomatoes, onion, cilantro, jalapeños, lemon juice, lime juice, and salt. Toss gently and refrigerate until ready to use.
  4. Divide the cilantro lime rice among four serving bowls.
  5. Add the shredded lettuce, grilled chicken, and warm black beans.
