  • 3/4 to 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon coriander
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)

Mango Avocado Salsa

  • 1 mango, diced
  • 1 to 2 avocados, diced
  • 1 jalapeño, diced
  • 1/2 red onion, diced
  • 2 tablespoons cilantro, chopped
  • Salt and black pepper, to taste
  • Fresh lime juice

For Serving

  • Cilantro lime rice
  • Corn
  • Lettuce
  • Cotija cheese
  • Black beans
  • Sour cream

Instructions

  1. In a large bowl, combine salmon, olive oil, chipotle adobo sauce, garlic, chili powder, cumin, oregano, coriander, salt, and black pepper. Mix well to coat evenly.
  2. Heat a skillet over medium-high heat and add olive oil. Once hot, add salmon pieces in a single layer.
  3. Sear the salmon on all sides for 6–8 minutes until golden brown and cooked through. Remove from heat.
  4. In a separate bowl, combine mango, avocado, jalapeño, red onion, cilantro, lime juice, salt, and pepper. Toss gently and adjust seasoning to taste.
  5. Assemble bowls with cilantro lime rice, salmon, salsa, and your favorite toppings like corn, black beans, lettuce, cotija cheese, and sour cream.
