Instructions
- In a large bowl, combine the chopped strawberries, Greek yogurt, honey, and vanilla extract until well mixed.
- Line a baking sheet or large plate with parchment paper.
- Scoop approximately 2 tablespoons of the yogurt mixture onto the prepared surface to form 10 clusters.
- Freeze for 1 to 2 hours, or until completely solid.
- Add the chocolate chips and coconut oil to a microwave-safe bowl.
- Microwave in 15 to 30-second intervals, stirring between each interval until smooth and fully melted.
- Remove the frozen clusters from the freezer.
- Using a spoon, coat each cluster with melted chocolate until fully covered.
- Return the coated clusters to the parchment-lined tray.
- Sprinkle with flaky sea salt if desired.
- Freeze for an additional 5 to 10 minutes, or until the chocolate hardens.
- Serve immediately or store in the freezer.
