Chicken Marinade
- 1 ¼ pounds boneless skinless chicken thighs

- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt

Avocado Salsa
- 2 ripe avocados, cubed
- ⅓ cup cilantro, finely diced
- ¼ cup red onion, diced
- 2 tablespoons lime juice
- ½ teaspoon salt
Bowls
- 2 cups cooked cilantro lime rice
- 1 can black beans, drained and rinsed
- 1 ½ cups corn
Chipotle Sauce
- ½ cup plain Greek yogurt
- 2 chipotle peppers in adobo
- 1–2 tablespoons adobo sauce
- 1 tablespoon fresh lime juice
- ½ teaspoon salt
- ¼ teaspoon garlic powder
Instructions
- In a bowl, whisk together all marinade ingredients. Add chicken and coat well. Marinate for at least 30 minutes or up to 6 hours in the fridge.
- Prepare rice if needed. Mix in lime juice, cilantro, and salt for extra flavor.
- Blend all chipotle sauce ingredients until smooth. Set aside.
- In a bowl, combine all avocado salsa ingredients.
- Preheat oven or air fryer to 400°F (200°C).
- Cook chicken:
- Oven: 20–25 minutes
- Air fryer: 14–18 minutes
Cook until internal temperature reaches 165°F.
- Let chicken rest for a few minutes, then slice.
- Assemble bowls with rice, black beans, corn, avocado salsa, and chicken.
- Drizzle with chipotle sauce and garnish with fresh cilantro. Serve and enjoy!
