Instructions
- Add the quinoa, coconut milk, tamari or soy sauce, curry powder, and cumin to a small saucepan. Stir well to combine.
- Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer.
- Cover and simmer for about 15 minutes, or until the coconut milk has been absorbed and the quinoa is tender.
- Remove the saucepan from the heat. Stir gently, cover again, and let the quinoa rest for 5 minutes.
