- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
- 6 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, finely chopped (for garnish)
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a large bowl, whisk together melted butter, garlic, smoked paprika, onion powder, chili powder, cumin, salt, and black pepper.
- Add chicken pieces and toss until fully coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
- Preheat grill or grill pan to medium-high heat.
- Thread chicken onto soaked skewers, leaving space between pieces.
- Grill for 4–5 minutes per side until nicely charred and cooked through (internal temp 165°F).
- Remove from grill and brush with leftover cowboy butter.
- Garnish with chopped parsley and serve warm.
Notes
- Chicken thighs stay juicier, but chicken breast works well too.
- Don’t skip soaking the skewers—it prevents burning.
- Add a squeeze of lemon before serving for extra freshness.
- You can also bake at 400°F for 20–25 minutes if you don’t have a grill.
