Ingredients

Scale

For the Creamy Sauce:

  • 1 lb sweet or mild Italian sausage, casings removed

  • 1 cup white onion, chopped

  • 2 large garlic cloves, grated or pressed

  • 2 Granny Smith apples, chopped into bite-sized pieces

  • 3 tablespoons unsalted butter

  • 1/4 cup all-purpose flour

  • 2 cups chicken broth

  • 4 sprigs fresh thyme

  • 2 sprigs fresh oregano

  • 1 sprig fresh sage

  • 3/4 cup heavy cream

  • 1 cup reserved pasta water

  • 1/2 cup smoked Gouda cheese, freshly grated

  • 1/4 cup smoked Gouda cheese, for topping

  • Sea salt and black pepper, to taste

  • Fresh thyme, for garnish

For the Pasta:

  • 1 lb pasta of choice (rigatoni, shells, or penne)

  • 1 teaspoon sea salt

  • Water for boiling

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve 1–2 cups of pasta water before draining. Set pasta aside.

  2. Brown the Sausage: Heat a large skillet over medium heat. Add Italian sausage, breaking it into bite-sized pieces. Cook for 6–8 minutes until browned and fully cooked. Transfer to a paper towel-lined plate.

  3. Sauté the Onion: In the same skillet, add chopped onion and cook for about 4 minutes, stirring frequently until softened and lightly golden.

  4. Add Apples and Garlic: Add grated garlic, diced Granny Smith apples, and butter. Stir until the butter melts, then cook for another minute.

  5. Make the Sauce Base: Sprinkle flour over the apple mixture and stir to coat. Cook for 1 minute. Slowly add 1 cup chicken broth, scraping up the browned bits. Let simmer briefly, then add the remaining broth.

  6. Add Herbs and Cream: Add thyme, oregano, sage, and heavy cream. Stir well and simmer gently over low heat for 5 minutes.

  7. Combine with Sausage: Return the cooked sausage to the skillet and simmer for 2 minutes. Stir in 1 cup reserved pasta water.

  8. Melt the Gouda: Remove herb stems. Reduce heat to very low and gradually add 1/2 cup grated smoked Gouda, stirring until melted and smooth. Simmer gently if the sauce needs to thicken.

  9. Combine Everything: Add cooked pasta and toss until evenly coated with the creamy sauce.

  10. Garnish and Serve: Season with sea salt and black pepper. Sprinkle with the remaining Gouda and fresh thyme. Serve immediately.

Notes

  • Best Pasta: Shells, rigatoni, and penne hold the creamy sauce beautifully.

  • Apple Choice: Granny Smith apples provide the perfect tart contrast to the rich Gouda sauce.

  • Cheese Tip: Use freshly grated smoked Gouda for smoother melting.

  • Creamy Sauce: Keep the heat low when adding cheese to prevent separation.

  • Sauce Consistency: Add extra reserved pasta water if too thick, or gently reduce the sauce if too thin.

  • Sausage Options: Substitute hot Italian sausage for a spicy variation.

  • Storage: Refrigerate leftovers in an airtight container for up to 3–4 days.

  • Reheating: Warm gently with a splash of milk or chicken broth to restore creaminess.

  • Make Ahead: Prepare the sausage and sauce ingredients ahead of time, then cook the pasta fresh before serving.
