  • 2 large chicken breasts, cut into bite-sized cubes
  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded cheese (cheddar or mild melting cheese)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili flakes (adjust to taste)
  • Salt and black pepper to taste
  • Fresh parsley or cilantro, chopped (for garnish)
  • 1 small red chili, thinly sliced (optional)

Instructions

  1. Heat 1 tablespoon oil or butter in a large pan over medium heat. Add chicken, season with salt, pepper, and smoked paprika, and cook 5–7 minutes until golden and cooked through. Remove and set aside.
  2. In the same pan, add remaining oil. Sauté garlic and onion for about 2 minutes until fragrant.
  3. Add cauliflower florets and cook for 5 minutes, stirring occasionally until slightly tender.
  4. Pour in chicken broth and heavy cream. Stir and bring to a gentle simmer.
  5. Add shredded cheese and stir until melted and smooth.
  6. Return chicken to the pan and mix well. Cook for 3–4 minutes until heated through.
  7. Garnish with fresh herbs and chili slices before serving.
