Description
Creamy Coconut Lime Chicken is a quick one-skillet dinner made with pan-seared chicken breasts baked in a rich coconut milk sauce with garlic and fresh lime. This bright, creamy, and flavorful dish comes together in about 30 minutes and pairs perfectly with rice or vegetables for an easy weeknight meal.
Ingredients
2 lb boneless skinless chicken breasts (about 4 chicken breasts)
1/4 cup all-purpose flour
1/4 cup chopped cilantro, plus extra for garnish
2 tbsp coconut oil
1 tbsp olive oil
1 garlic clove, minced
1 cup coconut milk
2/3 cup chicken broth
1 tbsp brown sugar (or coconut sugar)
2 limes
1 green onion, chopped for garnish
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Heat a large oven-safe skillet or Dutch oven over medium heat. Add the coconut oil and olive oil.
In a bowl, mix the flour and chopped cilantro. Lightly coat each chicken breast in the mixture.
Place the coated chicken breasts into the hot skillet and pan-sear for 3–4 minutes per side until lightly golden.
Add the minced garlic to the skillet and cook for about 30 seconds until fragrant.
In a separate bowl, whisk together the coconut milk, chicken broth, brown sugar, and the juice from one lime.
Remove the skillet from heat and pour the coconut milk mixture over the chicken. Transfer the skillet to the oven and bake for 10–15 minutes, until the chicken reaches an internal temperature of 165°F.
- Remove from the oven and squeeze the remaining lime juice over the chicken. Garnish with chopped cilantro and green onions. Season with salt and pepper before serving.
Notes
Cook time may vary depending on the thickness of the chicken breasts.
For a thicker sauce, simmer the sauce on the stovetop for a few minutes after baking.
To make this recipe gluten-free or Paleo, replace flour with arrowroot starch.
For Whole30, omit the brown sugar and use arrowroot starch instead of flour.
This dish pairs wonderfully with jasmine rice, couscous, or roasted vegetables.
