  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1 tbsp capers (optional, for Mediterranean flavor)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  5. Add mushrooms and cook until softened, about 3–4 minutes.
  6. Stir in cherry tomatoes and cook until slightly blistered.
  7. Pour in chicken broth and let it simmer for 2 minutes.
  8. Add heavy cream and Parmesan cheese, stirring until smooth and creamy.
  9. Toss in spinach and let it wilt into the sauce.
  10. Return the chicken to the skillet and simmer for 5–7 minutes until fully cooked.
  11. Sprinkle with capers and garnish with fresh parsley before serving.

Notes

Swap heavy cream with half-and-half for a lighter version.

Chicken thighs can be used for extra juiciness.

Serve over pasta, rice, or with crusty bread to soak up the sauce.

If your sauce thickens too much, add a splash of broth to loosen it.
