- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup cherry tomatoes
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 1 tbsp capers (optional, for Mediterranean flavor)
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Add mushrooms and cook until softened, about 3–4 minutes.
- Stir in cherry tomatoes and cook until slightly blistered.
- Pour in chicken broth and let it simmer for 2 minutes.
- Add heavy cream and Parmesan cheese, stirring until smooth and creamy.
- Toss in spinach and let it wilt into the sauce.
- Return the chicken to the skillet and simmer for 5–7 minutes until fully cooked.
- Sprinkle with capers and garnish with fresh parsley before serving.
Notes
Swap heavy cream with half-and-half for a lighter version.
Chicken thighs can be used for extra juiciness.
Serve over pasta, rice, or with crusty bread to soak up the sauce.
If your sauce thickens too much, add a splash of broth to loosen it.
