Ingredients
Scale
- 4 boneless, skinless chicken thighs (or breasts)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- ½ cup heavy cream
- ½ cup sliced pepperoncini peppers
- ¼ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant (about 30 seconds).
- Pour in chicken broth and scrape up any browned bits from the pan.
- Stir in heavy cream, Parmesan cheese, Italian seasoning, and pepperoncini peppers.
- Return the chicken to the skillet and simmer for 10–12 minutes until fully cooked.
- Spoon sauce over the chicken and garnish with fresh parsley before serving.
Notes
You can swap chicken thighs for breasts, but thighs stay juicier.
For extra heat, add a splash of pepperoncini brine.
Sauce will thicken as it rests—don’t panic if it looks thin at first!
