- 1 ½ cups shredded cheddar cheese
- ½ cup cream cheese, softened
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- ½ tsp Italian seasoning
- ¼ cup chopped green onions (optional, for garnish)
Instructions
- Cook the rotini pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft, about 3–4 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned. Drain excess grease if needed.
- Season with paprika, salt, pepper, and Italian seasoning.
- Pour in the Rotel tomatoes (with juices) and stir well. Let simmer for 3–4 minutes.
- Add heavy cream and cream cheese, stirring until smooth and creamy.
- Mix in shredded cheddar cheese and stir until melted.
- Add the cooked pasta and toss until fully coated in the sauce.
- Simmer for 2–3 minutes, then remove from heat.
- Garnish with chopped green onions and serve warm.
Notes
Swap ground beef with ground turkey for a lighter version.
Add a pinch of red pepper flakes for extra heat.
If the sauce gets too thick, stir in a splash of pasta water to loosen it.
