  • 12 oz rotini pasta
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • ½ cup cream cheese, softened
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • ½ tsp Italian seasoning
  • ¼ cup chopped green onions (optional, for garnish)

Instructions

  1. Cook the rotini pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft, about 3–4 minutes.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add ground beef and cook until browned. Drain excess grease if needed.
  5. Season with paprika, salt, pepper, and Italian seasoning.
  6. Pour in the Rotel tomatoes (with juices) and stir well. Let simmer for 3–4 minutes.
  7. Add heavy cream and cream cheese, stirring until smooth and creamy.
  8. Mix in shredded cheddar cheese and stir until melted.
  9. Add the cooked pasta and toss until fully coated in the sauce.
  10. Simmer for 2–3 minutes, then remove from heat.
  11. Garnish with chopped green onions and serve warm.

Notes

Swap ground beef with ground turkey for a lighter version.

Add a pinch of red pepper flakes for extra heat.

If the sauce gets too thick, stir in a splash of pasta water to loosen it.
