  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 can (14.5 ounces) crushed or diced tomatoes
  • 1 cup heavy cream or cream cheese
  • 4 cups fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan or Pecorino Romano cheese
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add onion and garlic, then sauté until fragrant and translucent.
  2. Stir in crushed tomatoes and cook for 5 minutes to blend the flavors.
  3. Add heavy cream or cream cheese and stir until smooth and creamy.
  4. Add tortellini directly into the sauce with a splash of water or broth. Simmer for 3–5 minutes until tender.
  5. Stir in fresh spinach and cook until wilted.
  6. Season with salt, pepper, Italian seasoning, and red pepper flakes if using.
  7. Stir in Parmesan cheese, garnish with fresh basil, and serve warm.

Notes

Fresh tortellini cooks quickly, so avoid overcooking.

Add grilled chicken, sausage, or shrimp for extra protein.

Kale or arugula can replace spinach for a different flavor twist.
