- 2 medium yellow onions, sliced
- 26 ounces frozen meatballs
- 2 cups low-sodium beef broth
- 1 (1-ounce) package brown gravy mix
- 2 teaspoons minced garlic
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon white wine vinegar
- 1/4 cup water
- 2 tablespoons cornstarch
- 1 1/2 cups Gruyere cheese, grated
Instructions
- Place the sliced onions evenly in the bottom of a 6-quart Crock Pot. Add the frozen meatballs over the onions.
- In a medium bowl, whisk together the beef broth, brown gravy mix, minced garlic, black pepper, dried thyme, and white wine vinegar until well combined.
- Pour the broth mixture evenly over the meatballs and onions.
- Cover and cook on HIGH for 2 1/2 to 3 1/2 hours or LOW for 5 to 6 hours.
- In a small bowl, whisk together the cornstarch and water until completely smooth. Pour the slurry into the Crock Pot and gently stir to combine.
- Sprinkle the grated Gruyere cheese evenly over the meatballs. Cover and cook for another 10 minutes, or until the cheese is melted.
- Serve warm over mashed potatoes or rice, spooning the onions and savory gravy over the top.
Notes
- Frozen meatballs can go directly into the slow cooker; follow any preparation and food-safety instructions on the package.
- Low-sodium beef broth is recommended because the meatballs, gravy mix, and Gruyere can already contain plenty of salt.
- Mix the cornstarch with cold water before adding it to prevent lumps.
- Freshly grated Gruyere melts particularly well, but Swiss cheese can be used as a substitute.
- Cooking times can vary slightly between slow cookers and depending on the size and type of meatballs.
