Description

Creamy, cheesy, and packed with Italian-inspired flavor, Crockpot Chicken Parmesan Soup combines tender shredded chicken, rotini pasta, tomatoes, Parmesan, mozzarella, and crispy buttery breadcrumbs for an easy slow cooker comfort meal.

  • 3 boneless, skinless chicken breasts
  • 1 tablespoon chopped garlic
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 4 cups chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 cup heavy whipping cream
  • 8 ounces uncooked rotini pasta
  • 1/2 cup breadcrumbs
  • 1 tablespoon butter
  • 1 1/2 cups shredded mozzarella cheese


Instructions

  1. Add the chicken broth, chicken breasts, crushed tomatoes, garlic, Italian seasoning, tomato sauce, salt, and black pepper to the crockpot.
  2. Cover and cook on HIGH for 3–4 hours or LOW for 6–8 hours, until the chicken is fully cooked and tender.
  3. Remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken to the soup.
  4. Stir in the heavy whipping cream, uncooked rotini, and freshly grated Parmesan.
  5. Cover and cook for about 15–20 minutes on HIGH or 25–30 minutes on LOW, until the pasta is tender.
  6. Meanwhile, melt the butter in a small skillet over medium heat. Add the breadcrumbs and cook, stirring frequently, until golden and lightly toasted.
  7. Ladle the soup into bowls and top each serving with shredded mozzarella and toasted breadcrumbs.
  8. Serve warm with extra Parmesan or fresh basil if desired.

Notes

  • Freshly grated Parmesan melts more smoothly than packaged pre-shredded cheese.
  • Check the pasta frequently near the end so it does not become too soft.
  • The soup will thicken as it sits because the pasta absorbs liquid. Add extra chicken broth when reheating if needed.
  • For leftovers, you can cook the pasta separately and add it to each serving.
  • Make sure the chicken reaches an internal temperature of 165°F (74°C) before shredding.
  • Add red pepper flakes for a slightly spicy version.
