Ingredients

  • 1 large carrot, peeled and grated
  • 1 medium apple, diced
  • 1 cup red cabbage, finely shredded
  • 1/4 cup raisins or dried cranberries
  • 1/4 cup walnuts or pecans, chopped
  • 2 tablespoons fresh parsley, chopped

Creamy Citrus Dressing

  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Peel and grate the carrot into a large mixing bowl.
  2. Core and dice the apple, then immediately add it to the bowl with the carrots.
  3. Add the shredded red cabbage, raisins or dried cranberries, chopped nuts, and parsley.
  4. In a small bowl, whisk together the Greek yogurt, mayonnaise, orange juice, lemon juice, honey, salt, and pepper until smooth.
  5. Pour the dressing over the salad and gently toss until evenly coated.
  6. Taste and adjust seasoning if needed.
  7. Refrigerate for 15 minutes before serving for the best flavor and texture.
