Description

For the Salad

  • 2 (15-ounce) cans white beans, rinsed and drained
  • 2 Persian cucumbers, thinly sliced (or ½ large cucumber)
  • 57 radishes, cut into matchsticks
  • ¾ ounce fresh dill, finely chopped
  • 2 green onions, thinly sliced

Instructions

  1. In a small bowl, whisk together the garlic, lemon juice, olive oil, Dijon mustard, salt, and black pepper until well combined.
  2. Let the vinaigrette rest for about 5 minutes so the lemon juice softens the garlic flavor.
  3. In a large serving bowl, combine the white beans, cucumbers, radishes, fresh dill, and green onions.
  4. Pour the vinaigrette over the salad and gently toss until everything is evenly coated.
  5. Taste and adjust with additional salt and pepper if needed.
