- 5–7 radishes, cut into matchsticks
- ¾ ounce fresh dill, finely chopped
- 2 green onions, thinly sliced
Instructions
- In a small bowl, whisk together the garlic, lemon juice, olive oil, Dijon mustard, salt, and black pepper until well combined.
- Let the vinaigrette rest for about 5 minutes so the lemon juice softens the garlic flavor.
- In a large serving bowl, combine the white beans, cucumbers, radishes, fresh dill, and green onions.
- Pour the vinaigrette over the salad and gently toss until everything is evenly coated.
- Taste and adjust with additional salt and pepper if needed.
- Serve immediately, or chill for 15–30 minutes before serving for even better flavor.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
