Description

This Dump-and-Bake Chicken Tzatziki with Rice is an easy one-pan Mediterranean-inspired dinner featuring tender seasoned chicken, fluffy rice, zucchini, and creamy tzatziki sauce. Perfect for busy weeknights, this flavorful casserole delivers a satisfying meal with minimal prep and cleanup.

Ingredients

Scale
  • 1 lb boneless skinless chicken breast or thighs, diced
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh oregano, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon smoked paprika
  • ¾ teaspoon seasoned salt
  • ½ teaspoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon turmeric
  • ⅛ teaspoon cayenne pepper
  • 1 cup uncooked long-grain white rice
  • 1 medium zucchini, grated
  • 2 cups chicken broth
  • Tzatziki sauce, for serving
  • Fresh herbs, for garnish
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Add chicken, lemon juice, olive oil, parsley, oregano, thyme, smoked paprika, seasoned salt, cumin, onion powder, garlic powder, black pepper, turmeric, and cayenne to the dish. Toss well to coat.
  3. Let the chicken marinate for 30 minutes while the oven heats.
  4. Stir in the uncooked rice, grated zucchini, and chicken broth.
  5. Cover tightly with foil and bake for 45–60 minutes, until the rice is tender and most of the liquid is absorbed.
  6. Fluff the rice gently with a fork and adjust seasoning if needed.
  7. Serve topped with tzatziki sauce, fresh herbs, and lemon wedges.

Notes

Boneless chicken breasts or thighs both work well.

Use long-grain white rice for best results.

Cover the dish tightly to prevent moisture from escaping.

Avoid overcooking to keep the rice fluffy rather than mushy.

Add feta cheese, chopped tomatoes, or extra vegetables for variation.

Sour cream with a squeeze of lemon can substitute for tzatziki if needed.
