Description

This Easy Baked Zucchini is a quick and flavorful side dish featuring tender roasted zucchini, crispy breadcrumbs, and golden Parmesan cheese. Ready in just 15 minutes, it’s the perfect vegetable side for busy weeknights, family dinners, or summer meals.


Ingredients

  • 600g (1.2 lb) zucchini (4 large or 5 medium)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons breadcrumbs
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 450°F (240°C) or 220°C fan-forced. Position the oven rack in the upper third of the oven.
  2. Trim the ends from the zucchini. Cut medium zucchini into quarters lengthwise and large zucchini into sixths.
  3. Place zucchini on a baking tray. Drizzle with 1 tablespoon olive oil and season with salt and pepper. Toss to coat.
  4. Arrange zucchini close together with the skin side facing down.
  5. Sprinkle evenly with breadcrumbs and Parmesan cheese.
  6. Drizzle with the remaining tablespoon of olive oil.
  7. Bake for 12 minutes, or until the Parmesan is golden and the zucchini is tender.
  8. Serve immediately.

Notes

Roasting at a high temperature helps prevent soggy zucchini.

Freshly grated Parmesan can be substituted for pre-grated Parmesan.

For extra flavor, add garlic powder, Italian seasoning, or paprika.

Air fryer option: Cook at 350°F for 18–20 minutes.

Breadcrumbs can be omitted for a lower-carb version.
