For the Bok Choy
- 2 lb bok choy
- 1 tbsp oil
- 1 tbsp salt
For the Garlic Sauce
- 6–8 cloves garlic, minced
- 3 tbsp vegetarian oyster sauce
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp sesame oil
- 1 tsp crushed Sichuan peppercorns (optional)
Instructions
- Cut the bok choy in half lengthwise. Wash thoroughly and drain well.
- Bring a large pot of water to a boil. Add the oil and salt.
- Add the bok choy, cover, and cook for 2 minutes until bright green and tender-crisp.
- Drain and arrange the bok choy on a serving platter.
- In a small bowl, combine the vegetarian oyster sauce, soy sauce, sugar, sesame oil, and crushed Sichuan peppercorns.
- Heat a skillet over medium heat. Add the minced garlic and sauce mixture.
- Simmer for 1 minute, stirring frequently until fragrant.
- Pour the hot garlic sauce over the bok choy.
- Serve immediately.
Notes
Do not overcook the bok choy or it may become too soft.
Baby bok choy can be substituted; reduce cooking time to 1 minute.
Fresh garlic provides the best flavor.
For extra heat, add additional Sichuan peppercorns or red pepper flakes.
