These easy cilantro lime steak bowls are a fresh, flavor-packed meal perfect for busy weeknights. Juicy grilled steak, fluffy rice, and vibrant toppings like corn, avocado, and a creamy cilantro lime sauce come together for a satisfying and colorful bowl everyone will love.

  • 1 lb flank or sirloin steak
  • 2 cups cooked white rice
  • 1 cup corn (fresh, canned, or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • ¼ red onion, thinly sliced
  • 2 tbsp olive oil
  • Juice of 2 limes
  • ¼ cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • ½ cup sour cream or Greek yogurt
  • Salt and pepper, to taste

Instructions

  1. Season the steak with salt, pepper, and a drizzle of olive oil.
  2. Heat a skillet or grill over medium-high heat. Cook steak for 4–5 minutes per side, depending on thickness.
  3. Remove steak and let it rest for 5 minutes before slicing thinly.
  4. In a small bowl, mix sour cream (or yogurt), lime juice, garlic, and chopped cilantro to make the sauce.
  5. Warm the rice and divide it into serving bowls.
  6. Arrange sliced steak, corn, black beans, tomatoes, avocado, and red onion over the rice.
  7. Drizzle generously with cilantro lime sauce.
  8. Garnish with extra cilantro and a squeeze of fresh lime if desired.

Notes

Swap steak for chicken or shrimp if preferred.

Use brown rice or cauliflower rice for a lighter option.
