Description

Easy Cream Cheese Chicken is a quick and comforting 30-minute dinner made with tender chicken breasts simmered in a rich, creamy garlic herb sauce. Perfect for busy weeknights, this one-pan recipe uses simple pantry staples to create a flavorful, family-friendly meal.


Ingredients

  • 8 ounces cream cheese, softened
  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh chopped parsley (optional)

Instructions

  1. Microwave the cream cheese until very soft. Cut into smaller pieces and set aside.
  2. Slice chicken breasts lengthwise to create 4 thinner pieces. Season with garlic powder, salt, and pepper.
  3. Heat butter and olive oil in a skillet over medium-high heat. Cook chicken for 5–6 minutes per side until golden and cooked through (165°F). Remove and set aside.
  4. Reduce heat to medium. Add chopped onions and sauté for 5–7 minutes until softened.
  5. Stir in garlic and cook for 30 seconds until fragrant.
  6. Add chicken broth, cream cheese, Italian seasoning, and red pepper flakes. Stir until smooth and creamy.
  7. Return chicken to the skillet and coat with sauce. Heat through. Adjust seasoning and add more broth if needed.
  8. Garnish with parsley and serve immediately.

Notes

Add extra chicken broth if the sauce becomes too thick.

For a lighter flavor, mix in a little sour cream.

Rotisserie chicken works great for a shortcut version.

Optional add-ins: mushrooms, spinach, or peas for extra texture and flavor.
