This Easy Hobo Casserole Recipe is a hearty, budget-friendly comfort food classic made with seasoned ground beef, tender potatoes, and layers of melted cheddar cheese. Perfect for busy weeknights, this family-friendly casserole comes together with simple pantry ingredients and bakes into a warm, satisfying dinner everyone will love.

Ingredients

Scale
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup beef broth
  • 1/4 cup milk (optional)
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Brown the ground beef for 5–7 minutes, breaking it apart as it cooks. Drain excess grease.
  3. Add onion and garlic. Cook for 3–4 minutes until softened.
  4. Spread the beef mixture evenly into the prepared baking dish.
  5. Arrange the thinly sliced potatoes over the beef in overlapping layers.
  6. Season potatoes with Italian seasoning, paprika, salt, and pepper.
  7. Sprinkle cheddar cheese and Parmesan cheese evenly over the top.
  8. Pour beef broth around the edges of the casserole. Drizzle with milk if using.
  9. Cover tightly with foil and bake for 30 minutes.
  10. Remove foil and bake for an additional 15–20 minutes, or until potatoes are tender and cheese is golden.
  11. For extra browning, broil for 2–3 minutes.
  12. Let rest for 5 minutes, garnish with parsley, and serve.

Notes

Slice potatoes very thinly (about ⅛ inch thick) for even cooking.

For guaranteed tender potatoes, parboil them for 5–7 minutes before assembling.

Season both the beef and potatoes for the best flavor.

If excess liquid remains after baking, allow the casserole to rest before serving.

For a creamier version, add a can of cream of mushroom soup to the beef mixture.

Yukon Gold potatoes provide the best texture for this casserole.
