- 3 cups cooked chicken, diced or shredded
- 1 cup frozen peas and carrots
- 1/2 cup frozen corn
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 can refrigerated biscuit dough
Instructions
- Preheat oven to 375°F (190°C).
- Melt butter in a skillet over medium heat.
- Stir in flour, salt, pepper, garlic powder, and onion powder to make a roux. Cook for 1–2 minutes.
- Slowly whisk in chicken broth and milk until smooth and thickened.
- Add chicken, peas, carrots, and corn. Stir well.
- Transfer mixture to a greased 9×13-inch baking dish.
- Flatten biscuits slightly and place on top of filling.
- Bake for 25–30 minutes until biscuits are golden brown.
- Let rest 5 minutes before serving.
Notes
Rotisserie chicken works perfectly for quick prep.
Bake biscuits separately for crispier bottoms if desired.
Puff pastry or homemade biscuits can replace canned biscuits.
Add potatoes or green beans for extra hearty flavor.
