Ingredients

  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 cups fresh pineapple (cut into chunks or rings)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice (fresh)
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh cilantro or green onions, for garnish

Instructions

  1. Make the marinade
    In a bowl, whisk together olive oil, soy sauce, honey, lime juice, garlic, and all the spices.
  2. Marinate the chicken
    Add chicken to the bowl and coat well. Cover and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
  3. Preheat the grill
    Heat your grill or grill pan to medium-high heat.
  4. Grill the chicken
    Place chicken on the grill and cook for 5–7 minutes per side, until fully cooked and nicely charred.
  5. Grill the pineapple
    Add pineapple to the grill during the last few minutes. Cook until lightly charred and caramelized.
  6. Rest and serve
    Let the chicken rest for 5 minutes. Serve with grilled pineapple and garnish with fresh herbs.

Notes

You can swap chicken thighs for breasts—just watch the cooking time to avoid drying out.

No grill? A stovetop grill pan or even a cast-iron skillet works great.

Fresh pineapple gives the best flavor, but canned (drained) can work in a pinch.
