Hearty Chicken and Lentil Nourish Bowl


Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1 cup dried green or brown lentils, rinsed
  • 6 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup fresh spinach or kale leaves, roughly chopped
  • Juice of 1 lemon
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5–7 minutes until softened.
  2. Stir in garlic, cumin, smoked paprika, and turmeric. Cook for 1 minute until fragrant.
  3. Add lentils, chicken broth, diced tomatoes, salt, and pepper. Bring to a boil, then reduce heat to low. Simmer for 25–30 minutes until lentils are tender.
  4. Stir in shredded chicken and cook for an additional 5 minutes.
  5. Add spinach or kale and lemon juice. Cook for 2–3 minutes until greens are wilted.
  6. Serve warm, garnished with fresh parsley or cilantro.
