Hearty Chicken and Lentil Nourish Bowl

- 2 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1 cup dried green or brown lentils, rinsed
- 6 cups low-sodium chicken broth
- 2 cups cooked shredded chicken
- 1 can (14.5 oz) diced tomatoes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup fresh spinach or kale leaves, roughly chopped
- Juice of 1 lemon
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5–7 minutes until softened.
- Stir in garlic, cumin, smoked paprika, and turmeric. Cook for 1 minute until fragrant.
- Add lentils, chicken broth, diced tomatoes, salt, and pepper. Bring to a boil, then reduce heat to low. Simmer for 25–30 minutes until lentils are tender.
- Stir in shredded chicken and cook for an additional 5 minutes.
- Add spinach or kale and lemon juice. Cook for 2–3 minutes until greens are wilted.
- Serve warm, garnished with fresh parsley or cilantro.
