For the Salad
- 4 ripe peaches, pitted and sliced
- 6 cups fresh arugula
- 1/2 cup crumbled goat cheese or feta cheese
- 1/4 cup toasted pecans or walnuts
- 1/4 red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn (optional)
For the Dressing
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth and combined.
- In a large salad bowl, add arugula, sliced peaches, goat cheese or feta, toasted pecans or walnuts, red onion, and basil if using.
- Drizzle the dressing over the salad ingredients. Toss gently until evenly coated.
- Transfer to a serving platter or individual bowls and serve immediately.
Notes
Use ripe but firm peaches for the best texture.
Grill the peaches for 1–2 minutes per side for a smoky flavor twist.
