Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine cottage cheese, olive oil, and egg until creamy.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Fold in chopped spinach and shredded mozzarella cheese.
- Shape the dough into 6 flat bagel-style rounds and place on the prepared baking sheet.
- Bake for 15 minutes or until golden brown and cooked through.
- Cool for 5 minutes before serving warm.
Notes
Full-fat cottage cheese gives the best creamy texture.
Lightly flour your hands if the dough feels sticky.
