Description

This Frito Corn Salad is a creamy, crunchy, flavor-packed side dish loaded with sweet corn, black beans, shredded cheese, and crispy corn chips. It’s quick to make, perfect for potlucks, BBQs, and busy weeknights, and always a crowd favorite.


Ingredients

  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Mexican blend cheese (optional)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup chopped fresh cilantro (optional)
  • 2 cups Fritos corn chips

Instructions

  1. In a large bowl, combine corn, black beans, tomatoes, red onion, and cilantro.
  2. In a separate bowl, mix mayonnaise, sour cream, and taco seasoning until smooth.
  3. Pour the dressing over the corn mixture and stir until well coated.
  4. Fold in the shredded cheese and mix gently.
  5. Just before serving, add the Fritos and toss lightly to keep them crunchy.
  6. Serve immediately and enjoy!

Notes

Add Fritos right before serving to keep them crispy.

You can substitute Greek yogurt for sour cream for a lighter version.

Spice it up with diced jalapeños or hot sauce if you like heat.
