This Frito Corn Salad is a creamy, crunchy, flavor-packed side dish loaded with sweet corn, black beans, shredded cheese, and crispy corn chips. It’s quick to make, perfect for potlucks, BBQs, and busy weeknights, and always a crowd favorite.

- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1 cup shredded Mexican blend cheese (optional)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1/4 cup red onion, finely chopped
- 1/4 cup chopped fresh cilantro (optional)
- 2 cups Fritos corn chips
Instructions
- In a large bowl, combine corn, black beans, tomatoes, red onion, and cilantro.
- In a separate bowl, mix mayonnaise, sour cream, and taco seasoning until smooth.
- Pour the dressing over the corn mixture and stir until well coated.
- Fold in the shredded cheese and mix gently.
- Just before serving, add the Fritos and toss lightly to keep them crunchy.
- Serve immediately and enjoy!
Notes
Add Fritos right before serving to keep them crispy.
You can substitute Greek yogurt for sour cream for a lighter version.
Spice it up with diced jalapeños or hot sauce if you like heat.
