- 4 cloves garlic, minced

- ½ teaspoon paprika
- ½ teaspoon salt, plus more to taste
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese, divided
- 2 tablespoons unsalted butter, melted
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Preheat the oven: Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- Season the potatoes: Add potatoes to a bowl and toss with 2 tablespoons olive oil, half of the minced garlic, Italian seasoning, paprika, salt, and black pepper. Spread the potatoes in a single layer on one side of the prepared pan.
- Prepare the chicken: Drizzle chicken breasts with the remaining 1 tablespoon olive oil. Rub with the remaining garlic, a pinch of salt and pepper, and half of the Parmesan cheese. Arrange the chicken on the other side of the pan.
- Bake: Roast for 30–35 minutes, flipping or stirring the potatoes halfway through. Cook until the potatoes are golden and fork-tender and the thickest part of the chicken reaches 165°F (74°C).
- Add butter and Parmesan: Brush the hot chicken and potatoes with melted butter. Sprinkle with the remaining Parmesan cheese.
- Serve: Garnish with fresh chopped parsley and serve immediately.
