  • 1 ½ lbs baby potatoes, halved (quarter larger potatoes)
  • 3 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt, plus more to taste
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese, divided
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons fresh parsley, chopped, for garnish


Instructions

  1. Preheat the oven: Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. Season the potatoes: Add potatoes to a bowl and toss with 2 tablespoons olive oil, half of the minced garlic, Italian seasoning, paprika, salt, and black pepper. Spread the potatoes in a single layer on one side of the prepared pan.
  3. Prepare the chicken: Drizzle chicken breasts with the remaining 1 tablespoon olive oil. Rub with the remaining garlic, a pinch of salt and pepper, and half of the Parmesan cheese. Arrange the chicken on the other side of the pan.
  4. Bake: Roast for 30–35 minutes, flipping or stirring the potatoes halfway through. Cook until the potatoes are golden and fork-tender and the thickest part of the chicken reaches 165°F (74°C).
  5. Add butter and Parmesan: Brush the hot chicken and potatoes with melted butter. Sprinkle with the remaining Parmesan cheese.
  6. Serve: Garnish with fresh chopped parsley and serve immediately.

  • Cut the potatoes into evenly sized pieces so they cook at the same rate.
