- 2 cucumbers, chopped
- 4 Roma tomatoes, chopped
- 1 cup sliced red onions
- 1/2 cup crumbled feta cheese
- 1/2 cup black olives, drained and halved
Greek Lemon Vinaigrette
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tsp dried oregano
- 2 tsp maple syrup or honey
- 2 garlic cloves, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a small bowl, whisk together olive oil, lemon juice, oregano, maple syrup, garlic, salt, and black pepper until combined.
- Chop the cucumbers and tomatoes, thinly slice the red onions, and halve the olives.
- Add all vegetables and olives to a large mixing bowl.
- Pour the vinaigrette over the salad and toss gently until evenly coated.
- Sprinkle crumbled feta cheese on top before serving.
- Serve immediately and enjoy fresh.
Notes
Soak red onions in cold water for 10 minutes for a milder flavor.
Kalamata olives work wonderfully in place of black olives.
Add chickpeas or quinoa for a more filling meal.
Best served chilled for extra refreshing flavor.
Store leftovers in the refrigerator for up to 2 days.
