  • 1 egg

  • 1/2 tsp cumin
  • Salt and pepper to taste

For the Bowl:

  • 2 cups cooked white rice (or brown rice)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup kalamata olives
  • Lemon wedges (for serving)

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber (squeezed dry)
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill (or 1 tsp dried)
  • Salt to taste

Instructions

  1. Prepare the meatball mixture:
    In a large bowl, combine ground meat, garlic, parsley, onion, breadcrumbs, egg, oregano, cumin, salt, and pepper. Mix gently until just combined.
  2. Form the meatballs:
    Roll the mixture into small, even-sized balls (about 1–1.5 inches).
  3. Cook the meatballs:
    Heat olive oil in a skillet over medium heat. Cook meatballs for 8–10 minutes, turning occasionally, until browned and fully cooked.
  4. Make the tzatziki:
    In a bowl, mix Greek yogurt, grated cucumber, lemon juice, garlic, dill, and salt. Stir until creamy and smooth. Chill until ready to serve.
  5. Assemble the bowls:
    Divide rice into serving bowls. Top with meatballs, tomatoes, cucumber, red onion, and olives.
  6. Finish and serve:
    Add a generous spoonful of tzatziki and a squeeze of fresh lemon juice. Serve immediately.
