Description

This Green Goddess Salad Sandwich is a fresh, creamy, and flavor-packed plant-based lunch made with chickpeas, avocado, crisp veggies, and vibrant herbs—perfect for a quick, healthy meal.

Green Goddess Dressing

  • 1/2 cup spinach
  • 1/3 cup fresh basil
  • 2 tbsp fresh dill, roughly chopped
  • 2 green onions, roughly chopped
  • 2 tbsp nutritional yeast
  • 1 clove garlic, crushed
  • 1 medium avocado
  • Juice of 1/2 lemon
  • 1 tbsp white wine vinegar
  • Pinch of salt and pepper

Sandwich Filling

  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 cup cabbage, finely diced
  • 1/4 cup red onion, finely diced
  • 1/3 English cucumber, finely diced
  • 1 jalapeño, finely diced

Assembly

  • 68 slices bread (whole grain or sourdough recommended)
  • Hummus
  • Dijon mustard
  • Optional: fresh spinach leaves

Instructions

  1. Make the dressing:
    Add all Green Goddess dressing ingredients to a blender or food processor. Blend until smooth and creamy. Set aside.
  2. Mash the chickpeas:
    In a large bowl, mash chickpeas with a fork or potato masher until mostly mashed but slightly chunky.
  3. Add vegetables:
    Mix in cabbage, red onion, cucumber, and jalapeño. Season with salt and pepper.
  4. Combine:
    Pour the dressing over the mixture and stir until everything is evenly coated.
  5. Assemble the sandwich:
    Spread hummus on one slice of bread and Dijon mustard on the other. Add spinach if using, then pile on the chickpea mixture. Top with the second slice of bread.
  6. Serve:
    Slice and enjoy immediately, or store filling separately for later use.
