Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 3 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 4 oz fresh mozzarella cheese, sliced
  • 1/2 cup basil pesto (homemade or store-bought)
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons balsamic vinegar
  • 1/4 cup fresh basil leaves, thinly sliced

Instructions

  1. Preheat grill to medium-high heat (400–425°F). Clean and oil the grates.
  2. In a bowl, mix olive oil, garlic, Italian seasoning, salt, and pepper. Coat the chicken evenly.
  3. Grill chicken for 5–6 minutes on one side. Flip and cook 2 more minutes.
  4. Add mozzarella slices on top, close lid, and cook until cheese melts and chicken reaches 165°F. Remove and rest.
  5. In a bowl, combine cherry tomatoes, balsamic vinegar, basil, and a pinch of salt.
  6. Spread 1–2 tablespoons pesto over each chicken breast.
  7. Top with tomato mixture, add black pepper, and serve immediately.
