Juicy Grilled Mango Chicken marinated in a sweet and savory mango-soy glaze, then grilled to perfection for a bold, tropical-inspired dinner.

- 2 lb. boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 2 ripe mangos, peeled and chopped
- 3 garlic cloves
- 1/2 tsp fresh grated ginger
- 2 tbsp water (or more as needed)
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Place chicken thighs in a large resealable bag or baking dish; set aside.
- In a blender or food processor, combine soy sauce, mangos, garlic, ginger, and water. Blend until smooth.
- Reserve 1/4 cup of the marinade, then pour the remaining sauce over the chicken.
- Seal and refrigerate for at least 2 hours, or up to 8 hours.
- Preheat grill to 400°F. Remove chicken from marinade, shaking off excess.
- Grill chicken for 6–7 minutes per side, or until fully cooked and slightly charred.
- Transfer to a serving plate, brush with reserved sauce, and garnish with cilantro. Serve and enjoy!
Notes
- For extra flavor, marinate overnight.
- Watch carefully while grilling—mango sugars can caramelize quickly.
- No grill? Use a grill pan or broiler instead.
